We changed the service to Fibre Max 100, still with EE. The line seems to be running around 107Mbps but the Think Broadband site suggests we should get 145-160Mbps on this service. Who is right here?

The installation was by Openreach, did they set us up right?

@pip11 : Perhaps, from what eng said, OP is already on FTTP variant of Fibre Max 100.
@Gordon57 : Is there an ONT on the premises?

@XRaySpeX Correct, I'm full FTTP fibre with an ONT, hence no phone line and the reason for my query as Openreach set the line to 100Mbps whereas it should be set at 160Mbps to get the average 145Mbps I started to ask about as that is quoted on many pages and I think my line was set up wrongly. I went to fibre in July so it's not a case of letting the line settle down any more.

Your speed will vary depending on other users and how much they are using at the same time as you.
Your connection is shared between up to 32 users in total on a 2.5Gb download. As long as it stays above 100Mb then you are within what you agreed to.

@pip11 But what I'm saying is that I think my line was set up wrong, capped at 100Mbps instead of the 160Mbps I've seen mentioned elsewhere. I don't mind getting an average 145Mps but every speed test so far come back with 107Mbps-ish. There are very few users of FTTP in the area so I don't think it's down to them. I've checked at various times of day and night.

It can't be capped at 100 Meg if it's doing 107 Meg on speedtests, which means it's syncing at at least 110 Meg.

I think they set it to 10% more so you think it's doing well, but I may be wrong, just my theory...
EDIT: I forgot to say the router reports Downstream: 1000Mbps and Upstream: 1000Mbps and Data rate:1000 Mbps / 1000 Mbps so I can't tell from those.

The router is only reporting the Gigabit rates of the LAN. It is ignorant of the sync speeds of the BB. Those are only known to the ONT modem.
All this has been conjecture. You have no facts to back up your contentions.
