Can I Replace physical SIM with an eSIM

I have an iPhone 12 Pro Max and was wondering whether I could completely replace my physical sim with an eSIM. This is for security reason for example if my phone is stolen the sim can’t be removed and my phone remains connected to the internet.

Phone can’t make or receive calls

I switched with a PAC to EE. Every number I call is incorrect . I got a text earlier saying my phone has switched successfully. I even restarted my phone for things to refresh. I can’t receive or make calls. Please help
