'Which' suggests the following to add a further layer of protection if your phone/number is being scammed:
'Secure your mobile account: Ask your network provider about any additional security, for example, you may be able to set up a unique Pin or password which must be provided to approve any account changes in-store or over the phone.'

When you call EE they will verify you with either a text message to your number with a pin code (OTP - One Time Passcode) or with a password that you would have set up specifically for verification when calling EE.
Special instructions may also be able to be set up to require additional proof over the phone. As for in-store protection they may be able to add an instruction to always take an additional proof such as Photo ID (Driving Licence or Passport) when accessing your account/transacting.

EE often use OTP to authenticate your identity when calling CS. Unsure on the in-store process.
