Can I switch my number to a different provider BUT KEEP my EE SIM

The EE coverage is increasingly a problem. Walking to and from Durham City today, it was worse than ever. I couldn't browse the web or stream music consistently. Almost no cover in Norfolk earlier this year, and even near York 2 weeks ago. Yet walking on the moors last weekend, nowhere near houses or people, I had a strong 5G signal.
When out and about I find my wife on O2 always has a stronger signal than me, on her last year's phone.
EE wants £145 to end my contract early. Can I continue this contract using my dual SIM phone and a new number, but port the existing number to O2?

No, this is not possible. Once you port your no. to another network you auto cancel your EE contract & your EE SIM is then dead.
