My contract with EE expired begin April 2021. Could not renew as I now am on the continent. Wished to keep my number, and use it when in the UK on a Pay as you go contract. How to progress??

By means of general advice, your EE contract doesn't expire and need renewing, it just has a minimum term after which you go onto a 30day rolling contract.
If you want to cancel the contract and move to PAYG, then you can call EE C/S and request this is done. You should be aware, that all new PAYG SIMs need to be used on EE's UK network before they will work abroad - and this includes migrations from pay-monthly.
If you are abroad when you make this change, your SIM will become dead until you use it in the UK.
