If I take a new sim only plan and find out there is not enough data, can I up the data at any time ?

Hi @Ssp72 ,
If you choose a Smart Plan with Reserve Data, you won't need to worry about running out of data as the bandwidth will cap at 2 Mbps after your allowance runs out but your data connection will continue to function.
I find that 2 Mbps is perfectly fine for audio-only Teams meetings and for my work in general.
There will also be the option to purchase Add-Ons such as the Unlimited Data Pass and Video Pass which you should look into. Good luck!
You can also switch to a more expensive plan as advised above, and should check if discounts fall off if you do that. For example, I have a 20% discount from work which I think would fall off if I were to switch to an unlimited data plan.
