Hi, I've recently brought a Google Pixel Watch 3 LTE from Google store it finally turned up today but i cannot find out how to add a data plan for the watch in My EE account as its very vague. As I have got the Essentials SIM Unlimited SIM only plan if that helps.

It is through your Pixel Watch app, should have the option for a data plan and you add it through there.

I am not sure where you've got that instruction from.
I've done it many times, I would not be answering if i didn't know what i was saying.
There is no way to add it through the EE App, which is why you can't find it.
You do it through the Watch App and go to where it mentions a data plan/set up mobile service/mobile network. This will prompt you to log in with your EE Account details and then give you the options of the available plans.

Oh okay, I was clicking on my other old watch as it uses the same app and set by default.
Will I get the discount for having a EE Essentials SIM Unlimited SIM only plan which I took out on 29 August??

No worries easy mistake.
If you mean getting the £7 discount, you would need to be on an EE Essentials Plus tariff which is the one that includes both EU Roaming and the Watch Data plan discount. I believe this is often on offer at £27 pm on a SIM Only which is a pretty good deal compared to the £23 for UNL without roaming and the watch plan. If that's the plan you're on, you could probably upgrade pretty easily if you currently pay less than £27.
Otherwise, you pay the £7 for the watch data plan which then allows you to use data and get calls and texts when you do not have your phone nearby.

I bought a Pixel Watch 2 and have spent hours on the phone to EE over the last 2 weeks. They now say the data plan will not work because my phone is Honor. Even though all the Google stuff says it will work with any Android phone. So be aware that if you have trouble, they won;t support anything other than a Google Pixel phone with it.

I've had a read around this one, and both our own device pages and Google directly recommend that the Pixel Watch series will work over cellular with 'Compatible Android phones', but there's no specific reference to this covering all models.
From what I can see it seems like most recent handsets are included, but this isn't guaranteed and can differ from handset to handset.
How were things left with you when you last spoke to our team about this?

Thank you, Peter, that was my understanding too, but it does not seem to reflect in reality.
Yesterday I was referred to a person in a "higher up" (?) department that the usual guides (who I must say have all been extremely helpful and tried their very best). He went through the same things and tried one last time but it did not work so when he phoned back later in the day he cancelled my watch line and promised a refuned of the month I have paid up front.
I had previously had a Sumsung 7 watch and hit the same issue, so sent it back to swap for the Google one on the assurance of the manager of my local EE store that the google one will work with anything !
The watch (if it will ever work!) is the perfect answer to a safety at work concern where I cannot always carry my phone, so I don't want to give up. I'm afraid my next step is to move to a different network and see if it will work there. Failing which I might have to swap my handset to a Pixel one. But really don't want to spend more money and find it is still a problem at the EE end. Sorry, not being rude, and I appreciate all the hours of help I have had from the guides, but this feels like an EE problem rather than a Google problem, as everything else works except the mobile data ?

Thanks for explaining there @KathyMc, I'm glad to hear that they've not left you paying for something you can't use here.
Like I mentioned in my last comment, it can vary between phone models and if your Samsung Watch struggled too, then it's likely that the software isn't quite agreeing with the Android build Honor use.
Changing networks is unlikely to resolve this issue, but it's certainly something you can give a try.
