EE don't keep records of your texts.
You can only see your call history online if you are already paying £2.50 pm for Itemised Billing at the time. Look at your device's Call Log.
To phone EE CS: Dial Freephone +44 800 079 8586 - Option 1 for Mobile Phone & Mobile Broadband or Option 2 for Home Broadband & Home Phone

I do believe your answer is correct, I know police request this data from your organisation to assist in their enquires. Please re examine your records to supply a transcript for a specific number.

Yes, the Police or Courts may request your call history from EE.
No, the Police or Courts cannot request the contents of your texts from EE. What they can request is the metadata of them only, i.e. when, sender & recipient.
What records am I supposed to be examining? I hold no records of your texts.

The Police & other public authorities have their own process for requesting telecoms data. It falls under the "if you need to know how, you would know how" category. It doesn't involve posting on a public internet forum!
