So I got to the EE shop with my ID and they claim my sim has been cancelled and have no reason for that , how’s this even possible please?

When was the last time you used your SIM for a chargeable service? If it was over 179 days ago, your account will be in hibernation.

My sim is not even up to 100 days just this February I bought
