Hello,
I have spoken to EE customer service and have been advised that VPNs are unsupported by the EE mobile broadband network. This is likely due to the dynamic IP address.
I was hoping someone had experience in setting up a fixed IP on the 5g router, or an APN change, or really any other workaround that seems to have worked.
Thanks.

You don't get fixed public IPs with EE mobile. In fact you don't get your own public IP address but share it with other users as the EE mobile network uses Carrier Grade NAT (CGNAT) resulting in a double NAT.

See the way the OP of No Internet connection on EE 4G Smart Hub when connecting to GlobalProtect VPN solved the problem.
