I can’t access certain apps and I’ve been told that it’s because the hub uses IPV 6 and not 4 , I have been into the hub control page but cannot see how it would be possible to do it .
Any ideas please ?

APN : everywhere
IP type : IPv4v6
Username : eesecure
Password : secure
Protocol : PAP
not only am I having problems to certain apps eg: banking and newspaper etc I cannot connect to my home alarm via my alarm system app .

EE's mobile network doesn't fallback to IPv4 nicely.
You need to edit that Profile so that IP type = IPv4, which should be in that dropdown, & then save it as default.

It won’t let me edit as it’s greyed out so should I set up a new profile?

Yes by taking a copy of the default Profile.
