End of contract - I have been notified

If I am at the end of my contract which included the purchase of my iPhone - why is it that I can stay with EE and continue to pay the same amount - surely end of contract means I have now paid for the iPhone so should be put on a sim only tariff

I have a Apple Watch add on onto the on phone number on my contract but I would like to cancel the Apple Watch as it’s a lot of money monthly and we do not use use the data on it. How do I do this?thanks
