Anyone else facing this issue?
I set my 2.4 GHz to a fixed channel 6 and saved. The setting doesn't hold and changes to channel 11. I have factory reset the router and the firmware is up to date.
Firmware version:
r2.64.2-R-1210501-PROD-1
App version: 2.34.2
Solved! See the answer below or view the solution in context.

@BrockTheBadger Then you have to report it back to EE CS, they may or may not be fully aware or even have fixed it or introduced it to that version from the Pro / 6+ version matching but you sure do have the latest FW for your older version off the SH31B version, one off the very first 1Gb/s wan interface models. Which actual fixed channel 1,6,11 are you setting and what is it adjusting too?
The fault was reported as a 7 Pro issue and not the 6+ version. Only possible side issue was having it fixed it maintained the channel selected, but NO Guarantee that a fresh FW update to which there has possibly been two off those with your 6+ Hub may have swapped it about. Never ever seen it happen to my EE 6+ when the channel i selected it stuck hard to it and never adjusted.

@Huggons1 The channel fix is on the EE FW list pinned post, you just got to see if it works or holds up.

It has been a long time coming. The EE tech they sent out couldn’t even understand what a fixed channel was and argued why I would want to be able to fix a channel!

@Huggons1 It does happen and some just don't grasp that times when the devices CSMA/CA or the surrounding signals are causing issues, you wish to take the sucker off Auto find the best and fix it just as you were trying to do. With all the iterations FW wise and introductions you may just have to dig deep with the Analyzer again see what is going on especially with the Hidden and all off the Free wifi that's getting thrown on lately.

Thanks Jim
I hadn't realised that my router is a different model.
Because I've been having problems with a Windows Remote Desktop Connection operating on my LAN repeatedly dropping I want to rule out interference from neighbouring WiFis on the same channel. As no-one else seems to be using channel 1, I wanted switch to it, but after saving the changes, the router Advanced Wireless page kept indicating that it had switched to either channel 6 or channel 11.
However, using 'Wifi Analyzer' on my Android phone, I have now discovered that the router is actually using channel 1 - it's the Advanced Wireless page that's misreporting - which obviously isn't expected behaviour, but in terms of my troubleshooting, it doesn't actually matter!

@BrockTheBadger Way to do it, always have the look see that it has flipped over to the correct channel and just not rely on what either the stupid Hub web manager or even worse what the App thinks it's all at. There is still a few problems going on FW wise at present as @Gelert5 is trying hard to trap down, current advice is NOT to trust anything at all with both interface methods. Link if you wish to go look.

Received 4.29.1 for smart hub pro in the night.
Not related, but the EE mobile app version 5.90.0 (both Apple and Android) has removed the option to be able to remotely reboot your EE router, which is a real shame.

@Huggons1 There is a fair amount going on both EE FW wise and the EE App updates that were both causing issues, it and as you are aware may just be a temp step back while the EE App development team are working on what those issues are especially in the Remote Access side of the EE app, Remote boot and tied to the Account side is fine but messed up you would end up rebooting the wrong connected EE Hub.
You do not per chance have a mobile device still with an Earlier app release or are all devices now updated App wise?
