Today I have switched BT to Ee no issues as such but … my sky connection is showing it’s connected to my old Network ? 🤔

This will be the transfer your devices setting on the EE Hub setup.
The way it works is by copying your old network details (SSID and Password) so that your devices can connect automatically to your new Hub.
I would advise saving a copy of your Sky network name and password or taking a picture of this so that you have it somewhere if you have to connect new devices after returning their equipment.
Despite the name that is showing, this is your EE connection from your EE Hub if your Sky equipment is no longer connected. The network name does not determine your provider, the underlying connection does, some people in fact often rename this to weird and wacky things.
