Hi @jeffattrell,
Welcome to the EE Community. 🙂
EE stores were also taking pre-orders for the new iPad and fulfilling orders on the same first come, first serve basis.

@jeffattrell I made a post about this on a similar topic.
Around 20th May, I ordered an additional line, an iPad Pro 11 inch 512GB, simply because the 12.9 inch wasn't in stock. I already have a 2020 iPad Pro 12.9 128GB Cellular model but wanted to give this to a family member who is stuck with a 9 year old iPad that is running at a snail's pace.
When it arrived, I very quickly decided it wasn't for me, the size difference was just too noticeable, and I returned it, before placing a pre-order for the 12.9 inch Pro 1TB 5G Space Grey model.
During the phone call, I was told by an EE rep that it might be worth "Going into a few EE stores in town" and seeing if they have any stock, he then went on to explain that when EE receive deliveries to their warehouse, a proportion of their stock is reserved for online orders only, and the remaining proportion of the stock are dispatched across their physical stores.
So for this reason, he explained that it was showing as out of stock online, but you could walk into an EE store in town, and find the same model and same capacity iPad in stock in a physical store available for same day purchase.
I still went ahead and placed the back/pre-order anyway, he did a quick stock check and stated that all capacity models of the 12.9 Pro (2021, M1 chip) were showing as "21 days or longer" wait time. This was on the 27th or 28th May if I recall.
