If I change from pay monthly to a sim only can I keep my current number?

Yes you can, changing from a device-based plan to a SIM-only plan is just a change of payment plan. It's referred to on "myEE" online as an upgrade.

 

You will keep your number as a matter of course when upgrading or changing payment plans.

 

Remember a SIM-only plan is different to a PAYG plan.
