PAYG with EE/ option to use PAYG in Southern Ireland/keeping the same number

Hi, I have just joined the forum today.  Admittedly I am not the most knowledgeable with mobile phones/networks etc so bear with me!!

1.  Im looking for recommendations on the best PAYG deals at present.  I have discovered that on the Isle of Arran in Scotland where I am helping out as a nurse that EE is the only network with coverage!! hence need to switch to EE

2. I am possibly/most likely going to be working for a while in Southern Ireland at some point in the near future and wondered if anyone could advise what type of SIM card I could use to allow me to use my phone in Southern Ireland in effect abroad

3.  I would like to keep my existing number I have at present and wondered if anyone could also advise how to go about doing this

Many thanks

@Rustyboy   You can use your allowances for up to 2 months when abroad after this time you’ll be charged international calls/text.    There is no SIM card contract or PAYG that allows you to have longer outside the UK.

To contact EE Customer Services dial 150 From your EE mobile or 0800 956 6000 from any other phone.
