Hi. I bought my EE pay as you go card on 09/09/21 as would like to change my operator, but wanted to keep my phone number. When I can have my number please, it’s going to be almost a week now?

Have you given EE the PAC from your previous operator yet? If not, you need to do that - either using the form linked from this help page or by calling 150 from your mobile.
If you have given your PAC more than a couple of days ago, I'd recommend calling EE C/S on 150 from your mobile - the C/S agents will have access to your individual account and should be able to advise further.
