Is there a device limit when using a 4GEE wifi sim card in another router? The third party router claims up to 64 devices, EE Home Router 2 claims 34 and if I put a phone sim into these routers, I've read I'd only get 11.
Normally I wouldn't be worried but just counted and I'm actually rocking up quite a number here, (between the alexas, smart plugs, baby monitor, TVs, PC, ps4 etc) wondering if I should be concerned?

Only if you put an EE unlimited data phone SIM & that's only an artificial limit imposed by EE's FUP.
It's the router itself that determines the max. no of connected devices, not the SIM. You can only go by the manufacturer's recommendations. The SIM & its mobile network can only "limit" the total bandwidth.
