Delay in shipping and monthly bill

I want to order a pay monthly phone but the phone I want (in the colour that I want) won't ship for 21 days. Will my contract start, be debited and be running that time I'll be wating for it to arrive? That's close to a whole month of not being able to do anything with it. I also want to cancel my contract (not ee) before I potentially order this phone, but I may then have a period of time without any access to be able to call/text/use data. 

 

I just want an idea what it means to order a contract phone with a long delivery wait time? Or whether I should just suck up my vanity and go for another colour that is in stock?
