My contract for my mobile wi-fi device ended on 30.10.2020, which means the device is already paid for. Why have my charges not changed to reflect this. I am not willing to pay for the same device for another year or two.

Because in the T&Cs you agreed to pay this for a minimum term and once this is over yo u have the option to cancel or upgrade.
The price stays the same until you do.
You need to upgrade to a sim only version which wold work out cheaper.

These contracts don't just end, just the min. term expires. They are not fixed term contracts. After the min. term they just carry on at the same price on a rolling 30-days' notice basis until you explicitly cancel or upgrade.
EE has no concept of paying off the device. You agreed to pay the same price for the full duration of the contract. There will however be a 10% discount 3 months after the end of min. term.
