Let's say my 18th month contract "ends" on the 1st, where I'd like to move to virgin but can't until the 8th since that's when an engineer can come, what would the process be like.

When would I have to let EE know so I don't lose service completely until the day I switch over?

Sign up 1st with VM & let them install their BB. Don't cancel with EE until VM is up & running to ensure no loss of service. You need to give EE 14 days notice of cancellation & so you could cancel EE that bit earlier.
