Hi there. I would like to purchase a SIM card for my son for his iPhone. I just want to make sure this will have a different phone number to mine? I am also with EE.

All SIMs have different mobile nos. That's how they work.
To phone EE CS: Dial Freephone +44 800 079 8586 - Option 1 for Mobile Phone & Mobile Broadband or Option 2 for Home Broadband & Home Phone

What’s the difference? I was thinking of doing contract as haven’t really thought about pay as you go.

With contracts you commit to a monthly figure for a contracted time period, @Harkess2811.
With pay as you go, you top up and choose a pack that only lasts for a set period (7 or 30 days).
