I got a new iphone 16 yesterday, transferred from my old phone (so that no longer works) but can't make calls or texts on my new phone (unable to verify number) and therefore can't contact EE to sort it out

So you were on EE before and upgraded? Did you have a physical SIM or an eSIM? How did you transfer this over?

When you switched to your new iPhone, did you move over your existing SIM, or do you have an eSIM?
If it's the former, will this still work in your old phone?

Does the SIM still work in another phone? Did you get a new SIM with your new iPhone? If so, could you try using that please?

If the SIM is working in other phones, we can rule the SIM out.
What happens when you put the SIM in the new phone? Do you see an error message?
Is it a brand new phone that you have received as an upgrade?
