How do I find PIN for eSIM after moving to new iPhone 15?

I recently upgraded from an iPhone 12 with a physical SIM to an iPhone 15 with an eSIM (my phone has no physical SIM slot). The move to the new phone went fine and all is working, but I can't configure the phone to require a PIN to activate the eSIM...

Never received additional Sims

I had a plan with BT for three Sims. I chose to move to EE I have only received one Sim so far and that was a month ago. I do not understand why I have not yet received the other two Sim cards.
