Until now I have used my phone for a few calls and mostly SMS. For various reasons I have topped up my PAYG balance so that it currently stands at about £70.
However, I'm considering buying one of the monthly packs (£5 or £10, probably), as I need data to send various things.
It isn't clear what happens to my PAYG Top-up balance if I buy a pack. Does the PAYG balance stand, and the pack added on, so that I have my £70 of calls and SMS plus whatever data, sms and calls come with the pack? Can I use my PAYG credit balance to pay for the packs? I have looked and cannot find anything definite about this on the EE site.

Your PAYG balance is used to pay for the pack & so it gets reduced each time you buy a pack, e.g. from £70 to either £65 or £60 for the £5 or £10 pack respectively.
Note that unless you stop your pack these packs are auto recurring & so will reduce your balance each 30-days.
