Hi,
I have an contract with unlimited data each month that I gift monthly to the other 2.
I'm travelling from the UK to Spain on 16th August, returning September 3rd.
Will I receive my full unlimited data whilst in Spain (inc the reset of Sept 1st) and be bale to gift any amount to the other 2 phones as normal?

Just to build on the great answers given by @XRaySpeX so far, you can gift as normal when abroad as your plan allowance would still be unlimited, just the usable allowance would change, though I would recommend doing it before leaving anyway just to make sure the gifting is successful. Gifting data will not effect your own 50Gb roaming data allowance.
Gifted data becomes part of the receiver's normal allowance so would be able to be used abroad in Spain, subject to either the daily charge or Roam abroad pass, you can find more about roaming costs using our online checker here if you have not already checked Roaming Costs | Help | EE
Every plan is subject to the 50GB fair usage policy when it comes to using data abroad. So you could, as in your example gift so that each number had 100Gb but each number would only be able to use up to 50Gb of that same as your number when in Spain, once back in the UK the rest of the data will be usable as normal.

You are limited to 50 GB per billing month while roaming.
You'll be able to gift as normal but if the giftee is also roaming they also won't be use more than 50 GB per billing month.

Aaah ok, so this 50gb I’m limited to, is that in total so if I gift 20g to each of my 2 other phones I would only have 10g myself?
Or is the 50gb MINE and can still gift as much as I want on top of that?

No, the 50 GB limit is on what you yourself use while roaming. You may gift as much as you are allowed normally..

You gift data from your overall unlimited data allowance but while roaming you may only use for yourself 50 GB each billing month. That's "use" not "gift".

All your premises there about gifting (regardless of any roaming) are invalid.
You may only gift a total of a max. of 100 GB in any 1 billing month to all or any of your other nos. Furthermore that gifted data must come out 1st 100 GB of your allowance that month. So as you use some of your allowance yourself, you correspondingly reduce how much you can gift that month.
