I forgot to add roaming before leaving so added a roaming pass once I arrived. I am a real technophobe. My phone won't connect once I leave the range of the hotel wifi. What am I doing wrong? I can't even call EE as when I do I get an error message saying no network despite being connected to the hotel wifi?

Assuming you're on pay monthly, your comment of "I forgot to add roaming" is the reason for this. Without roaming being active on your EE account, your phone can't connect to foreign networks - all else follows.
You'll need to contact EE CS from another working phone or over a web-calling app, to enable international roaming.
