For some unknown reason, after years of having a great reception, in my home on EE network, I never even get 1 bar all of a sudden. Wifi calling is fine for calls, but you cannot send or receive any texts. Since a lot of us are paying more for EE than we would with some 9f the other networks, they should make it so texts can be sent and received on WiFi too!

WiFi-calling supports both text messages and calls. It enables full normal use of your phone without needing mobile coverage.
You may be gettting confused with app-based "calls" which can only be made between users of those apps. When O2 & VF first-launched their WiFi-calling services, they only supported calls for many years. EE supported text over IMS from launch.

I can't receive any texts at all, when I don't have a mobile signal and I'm on WiFi calling, it caused a lot of problems when I was trying to login to all of my apps, after transferring everything from my old phone to my new phone. I had to leave home to get a signal, so that I could do it. I was not talking about calls at all, I ly texts, wifi calling is good for calls, but doesn't work for normal texts!

I refer you to my previous post.
I can promise you WiFi-calling supports text messages. Anyone who suggests otherwise is mistaken!
Try sending a text message to yourself while on WiFi-calling. What happens?
