Just wondering, when on holiday I leave my phone on Airplane Mode, if someone uses SMS will I get the message when I come home 3 weeks later ? How long do the messages stay in the SMS Queue ?

Welcome to the community.
Yes, the next time you connect to a mobile network, the messages should come through. They'll be queued for as long as the SIM is still an active subscription, 3 weeks will be fine.

SMS validity depends entirely on the sender's settings, EE phones often set this to one week - for example.
If your phone is unable to receive a message within the validity time, it will expire and be removed from the queue.

Thanks for that, I was sent an SMS ( Allegedly whilst I was on holiday ) in the first week of my holiday ( with Airplane Mode on ) and didn't receive any SMS from the company when I switched Airplane Mode off upon my return.

You will need to ask that company what the expiry time on their outgoing SMS are set to - this may be far easier said than done!
If that was less than the amount of time your phone was off mobile service, the message will have been lost.
