Mines exactly the same……1 or 2 bars where ever I go, they sent a new sim out but still the same. When talking to people the signal sometimes cuts out altogether. Contract has just come to an end so just debating whether to stay or leave ee

There's nothing inherently wrong with "only" having a certain number of bars onscreen. that's only a rough indicator of service.
When you say the signal drops out during calls, do you mean the audio drops out or your calls are dropping? You can report network issues via the "check status" option on the coverage tool, and then select "report a problem" - https://coverage.ee.co.uk/coverage/ee
