The signal was excellent before February 8th 2025. Now we have no signal or maximum of 1 bar since then.
network coverage says excellent. I can assure you it’s not!!

Whilst there's nothing inherently wrong with "only 1 bar", it sounds like you've used the "check coverage" option to predict the service in any given location.
Try using "check service status" instead - this has onward options to "report a problem" if necessary.

Yes I have used the service status, says it’s good. But it’s not. You can’t report it as it says this service is unavailable.
Seems like EE is broken!

Signal has gone from full to 1 bar and weak for the last 3 weeks.
Calls are difficult, nothing on data. WiFi calling is on, but not working.

That message generally suggest planned works to add additional technologies or more spectrum on existing techs.
It wouldn't be uncommon for the perceived coverage to reduce if additional high-band (and thus higher-capacity) spectrum has been added, although overall performance & service should improve.
Loss of coverage outright, is unusual, and should be reported via the usual channels.

Agree - ever since EE said they were doing “improvements” to the area it has completely dropped out. No signal for calls/texts or 4G/5G, indoors or outdoors. Couldn’t get anything today until reached Whittlesford.

Suspect at least one site may be off-air if there's a complete loss of coverage. There's 4 sites in the immediate area, one of the others may provide fringe coverage.
Use the "report a problem" link on the status checker.
