I have signal showing on my phone but unable to use it as web pages time out, messages arent being delivered or received, apps won’t load etc. Call quality is very poor too often dropping out mid call. Coverage checker is showing good signal in my area.
I have tried updating phone software and resetting network settings. Technical supports answer seems to be to connect to wifi which isn’t good enough when I’m paying £80 per month and can’t use my data.
I want to cancel my contract as I’m paying for a service I’m not receiving.

is your phone showing VoLTE/4G-calling next to the signal indicators? Or are you seeing 2G/3G instead?
Does it make any difference if you manually force 2G/3G via your phone's connection settings? It's not ideal long-term but would be a useful test.
It sounds like you've used the "check coverage" option on the website tool, not "check status" for faults & issues. That allows you to report problems as well as check for existing ones.
