Yes it shows great 5G outside and good indoor.
I am aware that works are being done on a mast nearby on an
occasional basis and I do receive a text alerting me of that. However last
night I received none and I had 3/4 minutes blackouts at 2043 2058 2103
2123 and so on. It also happens during the day. Blackout means there is no
internet whatsoever. On top of that the speed fluctuates wildly.

Please advise.

Please can you select the 'check status' option rather than 'check coverage'. If no problems are reported, please select 'report a problem' so our network team can investigate.

To answer this question, No you cannot, UK 5G Networks currently use 5G NR NSA Format, in simple terms it means the 5G Signal sits on top of current 4G Infrastructure. Most 5G Mobile Routers allow you to switch 5G Only (5G NR SA) which is for Future 5G Stand Alone Networks but if you switch to this mode, you will not get any 4G or 5G Network Signals at all.
