after setting up my Apple Watch to my new upgrade phone, my EE app is stating I am not the account holder? The contract is in my name so I don’t understand why this comes up

You set your account up online wrong.
Log into your online account then go to Account Settings - Manage Numbers and change your access from user to bill payer.
Alternatively you can speak to EE CS on 150.
