Hello,
My previous phone contract was under my ex-girlfriends name. That contract is now up and I would like to switch to a 'pay as you go' sim. I have been sent a sim with a different number but not sure how to go about keeping my old number. Old package was with ee so imagine would be straightforward enough.
Also there have been new better offers since I ordered a sim so will I need to request a new one, I'm assuming I won't need to but would appreciate some advice.

There's a few things in here, so I'll take them in-turn..
Your previous phone contract, unless it's in your name, is - unfortunately - not yours (as things stand) to do anything with. You will need the account holder's permission in order to make any changes.
Assuming point "1" can be worked around, and the line is outside of its minimum term, then the account holder can call EE C/S on 150, and give 30days notice to disconnect and move to PAYG. There shouldn't be any need to replace the SIM you already have, if it's working ok - all the changes needed can be performed on your EE account.
If you've ordered a new SIM, without knowing how you did this or where from, it's likely this is a "new" SIM with a "new" number. EE C/S may be able to move your existing number to this new SIM, but it would be far simpler, and provide less complication for errors, to just continue using your existing SIM if it still works.
As regards offers, these change on an almost continual basis.
