Like a silly thing ordered a 11 pro instead of 11 pro Max yesterday not delivered yet but how easy to change my order!

You need to call EE.
If it hasn't been dispatched yet then they can change the order.
If it's been dispatched then you will have to wait until you receive it to then send it back. Then once they process the return you can upgrade again
