My IPhone 11 Pro contract ends on the 3rd of October, which I am looking at upgrading to a Sim Only Plan, I was wondering, if I purchase my Sim Only Plan today, would I still be able to pay this months last contract payment?
Also will my contract end when I purchase the Sim Only Plan or will I need to ring up to cancel?

You've already paid a month in advance. When you upgrade you will pay pro-rata for each for the period you have them. So you'll probably get a rebate for the old contract.
If you upgrade & not just get a new contract, the new contract will replace the old.

Thank you so much for responding back.
So if I upgrade on the EE app right now and request a Sim Only Plan, once my new sim arrives and I put it in to my phone, the contract ( I have now ) will end?
Which my Sim Only Plan will kick in then?

Taking the "upgrade" terminology aside for a moment, all you are doing is changing the payment plan on an existing EE subscription.
That doesn't create any requirement for a new SIM unless there is a specific fault with your existing one that renders it unsuitable.
The changes to your payment plan will normally be actioned somewhere between "immediately" & a day or so later, and your next bill will include pro-rata credits & debits to reflect the mid-cycle change of plan.
You may then receive the "new" SIM a little while later - which, if your existing SIM is working, you may file appropriately or retain as a spare - as you prefer.
