I bought the 120GB for £20 per month sim deal & have only been getting 60GB per month

Look in your Extras & Add-ons for the other 60GB. If it's not there, it's just a mistake by EE. It's happened to many new data plans. You will need to speak to CS to get it corrected.

By all means check with CS but it can take a while to kick in as these deals are Double Data on current High Data Plans.
I looked into one for someone a while back (160gb) and they were only getting 80gb, a few days later it increased to 160gb.
A quick confirmation call to TS confirmed it can happen and can even take up to the next Monthly Allowance Refresh date.

Hi,
I've had a Sim contract since February 2020, I signed up for the 120 GB, for £20 offer, but I've always had only 60 GB of Data!
How can this be, when it clearly says in the EE App, I have 120 GB contract?
