I just ordered a new sim only deal but it was for the wrong number and need it correcting

We need to understand what you've done here, in order to help. When you say you "ordered a new SIM only deal", where did you order this, and how?
Changing an existing EE monthly plan to a new SIM-only plan would have meant you logged into your myEE or called C/S, in which case the number should have been double-checked, I'd have thought.
Or have you bought a new plan from a third-party website that wasn't an upgrade but was a new contract with a new number? It doesn't sound like it, but let's check.
