You need to phone EE giving 30 days notice of cancellation of your contract. If you are still within your min term you will be liable to pay early termination fees for the rest of the term. It will basically be months left x monthly charge - 20%.

Please see the below references if you wish to leave within the minimum term of your contract. If the minimum term is finished, you can contact the service provider to request that your SIM is moved from pay monthly to Pay As You Go in order to keep the number for incoming calls. You could also request a PAC to give to a new service provider which would cancel the contract with the service provider you are porting out of.
