Dual SiM in Spain

I am moving to Spain and have a dual SIM Samsung A20. I wish to use my phone there. I assume I unlock the phone after ending my EE service and insert Spanish SIM into phone. So on return to UK I can just buy an EE SIM in a shop and insert it. Is this correct?
