I’m currently on a Pay Monthly Contract including both phone and contract.
I have now cancelled it and it’ll run for another month. After this I want to keep my number but move to a “Pay as you go” sim only deal. Where I can top up different amounts each month.
How do I do this, whilst keeping my current number? I tried to order a new sim and put my phone number in but I was sent a sim with a new different phone number.

Welcome to the EE community
When you requested the C/S agent to disconnect your line, you needed to have specifically asked them to move your number to PAYG.
You will need to call back, speak to another agent and ask them to move your number to PAYG when it's disconnected. If you don't do so, you will lose the number and it will no longer be yours.
