Change Apple Watch pairing

Hi - I have an EE account with 2x phone plans and 1x Apple Watch plan. The watch (Series 5) is currently paired to my iPhone and its contract ends in October.
I am changing over to Android (S21) and will be buying the new Samsung Watch 4 (through Samsung direct with employee discount). I’ll be giving the Apple Watch to my wife.
What steps do I need to go through to successfully transfer the Apple Watch pairing to my wife’s number, ensuring that my new phone can pair with the Samsung watch plan on one of the “sim only” watch plans? There will also need to be some sort of action to migrate the Apple Watch plan to a sim only one at the end of its contract.
I have read the sticky about unpairing the Apple Watch from my iPhone and removing the data plan from it.
If I do this and then add the Apple watch as a new paired watch on my wife’s phone, will this create a new sim only watch plan linked to her phone, leaving me the task of linking the Samsung watch to my own phone?
Or will the fact that the watch’s esim must somehow be linked to my number cause problems?
Very happy if there is a self service option I can do here. Equally happy if I need to get in touch with 150 but I know that unusual requests can get complex fast so keen to understand the steps that need to happen, as well as potential problems that could occur.

Welcome to the community.
To get the Apple Watch onto your wife's plan, you would need to get a SIM only for the watch as you mentioned. This can be done by giving our Customer Care team a call, they will be able to add a SIM only plan to your account, and help you to disconnect the watch from your phone.
