It's currently tied in to my overall monthly payments. So my phone is £50ish and my Fitbit is £18 and I get billed the total of £78. I would like to pay off the fitbit in full, so that I just pay my phone monthly. Is this possible?

Welcome to the community
EE have no concept of your device & monthly subscription being separate - you make one monthly payment which covers your entire service.
What you can do is make a lump-sump payment of whatever amount you decide, which will then sit on your monthly account as a credit (rendering your monthly bills zero) until that credit is used up.
