I’m currently on a sim only contract with my iPhone XS Max and looking to buy the cellular version of the Apple Watch so I can take it running and leave my phone at home. Which is the correct plan for this?
Also what happens at the end of the 24 month contact period? Does it automatically change to the £7 watch sim only plan?

The cellular version of the Apple Watch will share data with you phones plan, so when you leave the house it will function as if you have you phone with you.
The GPS version doesn't do this and requires the phone to be connected.
With a cellular version of the watch you can (amount other things) also stream music via Apple Music, the GPS one you would need to download music.
So really the only choice is, which Apple Watch will you go for.
As for the plan at the end, you would be best to contact EE and see what offers they can give you towards the end of the plan if I'm honest. Otherwise you could be stuck on a higher plan.
If you are buying the watch outright, I would advise getting it direct from Apple, as you will have the full choice of their range. Whereas EE tend to not offer the full range.
The £7 per month is for the Apple Watch cellular plan that gives the watch the functionality of been able to connect to the EE network and allow you to leave your iPhone at home.
The £7 per month cellular plan is a rolling 30 day contract which means you can cancel with 30 days notice.
Just to add, if you get it from EE on contract, you have unlimited data, whereas if you get it elsewhere and add the plan, it is 10 Gig of data, which once the 2years are up on a contract and you go for the sim only plan, it will also be 10 Gig of data, in all cases it is unlimited calls and text.
