So I just bought an Apple Watch 5 cellular. I also have an iPhone 12 Pro.
I currently have a sim only contract with EE - with ultd data; min and calls.
can I use this plan on both my phone and watch without any extra costs. I don’t mind using traditional sim on my phone but if I wanted to use the cellular features of my watch can I with my current plan without any additional costs.

Your Apple watch will need its own plan. You cannot use the cellular features without one.

If you have purchased the watch from a third party, the 30-day data plan for the Apple Watch is £7.00 and you will get 10Gb of data per month, your calls and texts will share your phone allowance.

Hmm, but I have ultd data, calls and texts isn’t there a way to share my current plan with my watch?
So in other words the current plan I have is not useful on the watch? I’d still need to get additional data? I don’t see why I should that’s really unfair since I have unlimited data on my sim only currently. If that’s the case just won’t use cellular then.

Yes, if you want to connect the watch to your phone on cellular you would need the additional 30-day data plan for the watch.
Once you've paired your watch to your iPhone, you can add a 30-day plan, which you can buy through the Apple Watch app on your iPhone.

Its not free data on as many devices as you like, whenever you like, for as many people as you like.
You can pair it to your phone and not use the cellular part of it.
