Got new iPhone 12 pro max and am on an exciting 4g contract, how to order new 5g sim to replace my 4g?

You need to change to a 5G plan to receive 5G.
You don't get a new sim.

Just to add to Brendon's reply, there is no such thing as a 4G SIM or a 5G SIM. All EE SIMs are capable of operating on the 2G, 3G, 4G & 5G networks.
It's the plan you are on, and the phone you are using, that enables access to the 5G network.
If you are on a 5G plan and have a 5G phone, then your SIM will enable access to the 5G network anywhere that it's available.
