I moved to a plan with included Apple One a couple of months ago.
The link seemed to work and when I check on my phone under subscriptions it states I have the Apple One subscription active via EE, however on my phone none of the features work and I am still being charged directly by Apple for iCloud+
Checking my subscriptions are via my @Gmail.com address but my appleID is @Me.com, I don't know if this is the issue. Under the apple account it shows as @Me.com but then has subscriptions and media & purchases under my gmail email.
When I activated via the link it connected it to the gmail account as that was the one used for subscriptions but I'm wondering if that should have been connected to the Apple account?
Any ideas on how to resolve? I'm now paying for things like iCloud storage via Apple and EE and cannot access things like music and news. AppleTV+ works fine on my smart TV when logged in via my gmail account.

It sounds like you are right, your Apple One subscription has been activated but on the gmail address you use rather than your other one.
One option would be to just login using the gmail Apple ID for the subscription services such as AppleTV+ like you have been with that one. For the iCloud storage it looks like it should be possible to transfer that part of Apple One to your main Apple ID if you needed. If you've subscribed to Apple One and use a different Apple ID for iCloud – Apple Support (UK)
The subscriptions are not transferrable to a different Apple ID however. So if you are unable to use the gmail one for whatever reason, I would recommend getting in contact with our technical team.
Ask them if its possible they can remove the activated Apple One from your account, then you could go through activation again on your main Apple ID.

Thanks @Alex_H - I took a look at the apple article but it looks like the option I need is missing as it directs me to EE rather than showing the option to transfer part to my main apple ID.
I’ll get in touch with the tech team and see if they can resolve as you mentioned.
