Hello,
I am just checking that I was scammed or anything by a shop assistant. I attended a shop today to have battery repaired and at the start of the consultation a member of the team asked me to unlock the phone and walked away in the back of the shop with the phone unlocked. Should I worry or was it a routine part of the process?

I don't know what specific processes EE retail shops have for device repairs, but access to a phone to power it off, would require the PIN to be unlocked.
